Elaborated with care, the rums we offer are complex and authentic. They are appreciated by connoisseurs and are enjoyable to amateurs alike. The sugar cane that goes into their making is manually harvested from the first rays of dawn. It is immediately sent to a mill where it will be slowly and gently pressed to extract the juice. It is exclusively this precious first-crush juice, commonly called “fangourin” in Mauritius, which is used to elaborate the rums.
This juice will undergo fermentation to become what we name the “wine”. It will then be distilled in a traditional copper alembic. They only retain the heart of distillation to create the rums. For the lengthening, they use their very own spring water, sourced from tea plantation domain of Bois Chéri. It is this unique association of the care put into the sugar cane cultivation, the precision invested into the distillation process and the low mineral composition of the spring water which instill into Saint Aubin rums their unmatched authenticity and originality.
